Leivakreen (Estonian Rye Bread Mousse) is a traditional Estonian recipe for a classic dessert mousse made with left-over rye bread, whipping cream and sugar that's flavoured with cinnamon. Ingredients:
a few slices (about 100g) Estonian rye bread
300ml whipping cream
1 tbsp butter
pinch of cinnamon
40g sugar
40g vanilla sugar
Method:
Make certain the bread slices are very dry (you can dry them in an oven, if desired) then grate the bread. Combine the butter and sugar in a pan and when melted use to fry the breadcrumbs. Add the cinnamon, stir to combine, then take off the heat and set aside to cool.
When the bread is cold, whip the cream until it forms peaks then fold through the cooled breadcrumbs. Divide into wine glasses, top with a tart jam (bilberry, gooseberry or mirabelle is good) or fresh tart berries then serve as a dessert.
