These turkey cakes are an excellent way of using-up left-over turkey meat, particularly if you want to store them for later use. You can even use leftover mashed potato from the main Christmas meal.
Ingredients:
300g cooked turkey meat, minced
400g mashed potatoes
seasoned flour for dusting
salt and freshly-ground black pepper, to taste
fat or oil for shallow frying
Method:
Season the turkey meat with salt and black pepper then mix in enough of the mashed potato to give a firm mixture.
Using your hands, shape this mixture into little cakes and coat with the seasoned flour.
Heat oil in a pan, add the turkey cakes and shallow fry until golden brown on both sides.
Personally I like to add a generous pinch of chilli flakes to the turkey meat before adding the mashed potatoes.
