A traditional Latvian trifle made from grated rye bread, whipped cream, and tart berry jam – rich, refreshing, and uniquely Baltic.

Method:

Grate or crumble the rye bread finely. Toast in a dry frying pan until crispy and fragrant. Turn onto a plate, allow to cool slightly, then mix with the cinnamon and sugar.

In a chilled bowl, beat the cream with powdered sugar and vanilla until soft peaks form.

In individual glasses or a trifle dish, layer the rye bread, berry jam, and whipped cream. Repeat the layers until all ingredients are used, finishing with a dollop of cream.

Refrigerate for at least 2 hours before serving to allow the flavours to meld.

Garnish with fresh berries, mint leaves, or a dusting of grated chocolate.
