Ingredients:
500g kumquats, washed and dried
400g sugar
750ml brandy
Method:
Remove any green stems from the kumquats then use a sharp knife to make a crossways slit in the top of each one (this allows the alcoholic syrup to penetrate the fruit). Layer the fruit and sugar in a sterilized preserving jar then pour over the brandy (ensure the fruit is completely covered).
Seal securely with a lid then store in a cool, dark, cupboard, for at lest 4 months, inverting the jar occasionally to mix during this time.
