Krækiberjasaft Chatni (Crowberry Chutney) is a modern Icelandic recipe for a classic Indian-inspired fresh chutney made from a blend of crowberries, desiccated coconut, chillies and ginger with lime and coriander. Ingredients:
500ml crowberries
250ml desiccated coconut
2 fresh chillies
1 medium red onion, peeled and sliced into chunks
5cm length of fresh ginger, peeled and chopped.
1 tsp black salt
4 kaffir lime leaves
1/2 lime, peeled
50g fresh coriander, finely chopped
4 tbsp fresh mint, finely chopped
Method:
This is a very simple Indian-style fresh chutney.
Simply combine all the ingredients in a food processor. Pulse until chopped and thoroughly combined. Do not over process as the final chutney should be a little chunky.
Spoon into sterilized jars and keep in the refrigerator. It will store for up to four days.
