Morels have a light flavour and need a light hand. This recipe cooks them perfectly whilst treating them with the respect they need.
Ingredients:
4 large handfuls of morels
4 tbsp butter
80g flour
salt and black pepper, to taste
Method:
Halve the morels lengthways and toss in the flour to coat. Meanwhile add the butter to a large non-stick pan until just molten. Add the floured morels and cook gently until just golden.
