Kapana spice is a spicy and flavourful Namibian spice blend, that's typically used to flavour meat prior to barbecuing (though it can also be used in stews).
Ingredients:
1 tbsp garlic powder
1 tbsp onion powder
¼ tsp ground coriander
1 tbsp smoked paprika
1 tbsp sweet paprika
1 tsp red chilli flakes
1 tbsp dried thyme
1 tsp fine salt
½ tsp mustard powder
¼ tsp ground cumin
1 tbsp brown sugar
1 tbsp ground ginger
1 tsp ground black pepper
Method:
Simply combine all the ingredients together in a bowl, stirring to ensure the spices are evenly distributed.
Spoon into a jar and seal with an air-tight lid.
The kapana spice mix will keep for months if stored in an airtight container in a cool and dry place. Let the rub mature for a few days for the flavours to meld together before using.
