Jam Sauce is a traditional British recipe for a classic sweet sauce made from a mix of jam and fruit juice thickened with arrowroot that's typically used with steamed or baked puddings or as a topping for ice cream. Ingredients:
3 tbsp jam
300ml water or fruit juice
2 tsp arrowroot
3 tbsp cold water
squeeze of lemon juice
Method:
Add the fruit juice (or water) along with the jam to a pan and bring to a gentle simmer then cook for 5 minutes. In the meantime, blend the arrowroot and cold water to a smooth paste then stir in the jam mixture. Beat well to mix then return to the pan and heat, stirring constantly, until the sauce thickens and clears.
Add the lemon juice and immediately sieve into a sauce boat. This sauce can be served with steamed or baked puddings and makes an excellent accompaniment to ice cream.
