Ingredients:
150g butter, melted and cooled
150g granulated sugar
1 1/2 tsp vanilla extract
3 eggs
105g plain flour
70g cocoa powder
1/2 tsp baking powder
1/4 tsp sea salt
yellow and red food colour
480g vanilla icing
liquorice, gummy animals, twirlers, chocolate pieces etc, to garnish
Method:
Beat together the butter, sugar, vanilla extract in a large bowl. Add the eggs, one at a time, beating thoroughly to combine after each addition. Stir in the dry ingredients and beat with a metal spoon until thoroughly combined. Turn the resultant batter into a well-greased 30cm diameter pan.
Transfer to an oven pre-heated to 170°C and bake for between 20 and 22 minutes, or until the top of the cake springs back when pressed and a skewer inserted into the centre emerges cleanly. Remove from the oven and allow to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
When the cake is cold, colour the vanilla icing with yellow and red fool colouring until you have the desired shade of orange (should be pumpkin colour). Use this mixture to cover the top of the brownie cake then use the sweets (candies) to make it look like a Jack-o-Lantern. Slice into wedges before serving.
As an alternate you can pipe orange icing on individual brownie squares in the shape of a pumpkin.
