Transform traditional Irish soda bread into a delectable breakfast treat with this Irish Soda Bread French Toast (also known as ‘eggy bread’).

Ingredients:

4 slices of Irish soda bread
2 large eggs
120ml of milk
1 tbsp of granulated sugar
1/2 tsp of vanilla extract
1/4 tsp of ground cinnamon (optional)
Butter for frying
Maple syrup, honey and/or icing sugar for topping

Method:

Whisk together the eggs, milk, sugar, vanilla extract, and ground cinnamon (if using) in a bowl.

Set a frying pan over medium-high heat and when hot add a small amount of butter, to help prevent the bread from sticking.

Dip a slice of soda bread into the egg mixture, ensuring both sides are coated, then allow excess to drip off.

Transfer the bread to the hot frying pan and cook until golden brown on the first side (about 2–3 minutes) then flip over and cook until golden brown on the other side.

Transfer to a low oven to keep warm as you repeat the dipping and cooking process with the remaining soda bread slices, adding more butter to the pas as needed.

Once all bread is cooked, serve them hot with a drizzle of honey and a dusting of icing sugar.
