Irish Cream Fudge is a traditional Irish recipe for a classic sugar, butter and cream fudge with chocolate chips flavoured with Irish cream liqueur. The full recipe is presented here and I hope you enjoy this classic Irish version of: Irish Cream Fudge.
Line a 22cm square baking dish with greaseproof paper or baking parchment.
Mix together the sugar, butter, cream, Irish cream liqueur and vanilla extract in a large saucepan. Set this over medium heat and cook, stirring constantly, until the mixture comes to a boil.
Immediately reduce the heat to low and cook, stirring constantly, for a further 4–5 minutes until the mixture thickens.
Take the saucepan from the heat, set on a wire rack or heat-proof surface and stir in the white chocolate chips. Keep stirring until the white chocolate has fully melted and the mixture is smooth.
Pour the fudge mixture into the prepared baking dish and spread it out evenly.
Allow to cool then transfer to the refrigerator and chill for at least 2 hours, or until firm.
Once set, remove the fudge from the baking dish and cut it into small squares or desired shapes (eg diamonds).
