Irish Cream and Chocolate Cheesecake is a traditional Irish recipe for a classic no bake cheesecake of chocolate and cream liqueur blended with cream cheese in a digestive biscuit base. To garnish:
200ml double cream, whipped
cocoa powder, to dust
Method:
Gently melt the butter in a saucepan, then take of the heat and add the crushed digestive biscuits. Mix well until the biscuits have absorbed all the butter.
Press the resultant mixture into the base and prat way up the slides of a lined 18cm diameter springform cake tin. Transfer to your refrigerator and and allow to set for an hour.
In the meantime, prepare the filling. Lightly whip the cream cheese then beat in the Irish cream and icing sugar. Fold in the whipped cream and grated chocolate. When the mixture is smooth, spoon evenly onto the biscuit base.
Return to your refrigerator and allow to cool and set for two hours.
Once set, remove and decorate with whipped cream then dust cocoa powder over the top.
