This is a classic Indian accompaniment and like the majority of Indian chutneys it’s a fresh chutney. It’s simple to make from green chillies, mint leaves and coriander (cilantro) leaves.

Ingredients:

2 to 3 green chillies (remove seeds and membranes if you don’t like it too hot)
15g fresh mint leaves
15g coriander (cilantro) leaves
1/4 tsp sea salt
1/4 tsp sugar
2 tsp (or more) lemon juice
1/2 tsp cider or white wine vinegar
2 small cloves of garlic (optional)
1cm (1/2 inch) piece of ginger (optional)
4 tbsp water
1/4 tsp chaat masala

Method:

Making this is simplicity itself. Simply combine all the ingredients in a small food processor and pulse to chop then run the motor until smooth and finely blended.

Scrape into a small bowl and serve.
