Houses of Parliament Soup is a traditional British recipe for a classic soup of mixed vegetables, potatoes, cabbage and onions cooked in a mix of milk and stock flavoured with HP sauce that makes an excellent starter for Bonfire Night supper. This is a comforting British winter soup whose name derives from the Houses of Parliament image on the HP brown sauce bottle, which gives the soup its unique flavour.
Ingredients:
100g onions, finely diced
2 carrots, scraped and finely diced
2 parsnips, peeled and finely diced
100g turnips, peeled and finely diced
100g potatoes, peeled and finely diced
100g cabbage, finely shredded
300ml milk
300ml good stock
2 tbsp HP sauce
1 bayleaf
salt and freshly-ground black pepper, to taste
Method:
Place the vegetables in a pan then pour over the stock and the milk. Stir in the HP sauce then add the bayleaf and season to taste.
Bring the mixture to a boil, reduce to a simmer, then cover and cook for about 25 minutes, or until the ingredients are tender.
Ladle into warmed soup bowls and serve with plenty of warm, crusty, bread
