Ingredients:
450g ogi (wet cornflour)
1.2l water
Method:
Bring the water to the boil, mix the ogi to a smooth paste with a little warm water in a pot, then pour the boiling water on top until it thickens and changes colour.
Stir and cook for 3 minutes then sweeten to taste and serve with Akara (black-eyed pea fritters).
If desired you can spoon into a plastic bag and tie in the corner. Place in a steamer basket and steam for 20 minutes until set. That way you will get the eko shapes as in the image.
