Honey Snap Biscuits is a traditional English recipe for a classic crisp biscuit (cookie) made from a blend of butter, honey, syrup and flour leavened with baking soda that's shaped into balls and oven baked until crisp. Ingredients:
120g butter, softened
60ml honey
3 tbsp golden syrup
1 tsp baking soda
125g plain flour
100g caster sugar
Method:
Add the butter, honey and golden syrup to a saucepan and cook over medium heat, stirring frequently, until the butter has melted and the ingredients are blended. Take off the heat and stir-in the baking soda.
Combine the flour and sugar in a bowl and stir to combine then pour in the honey and butter mixture along with the flour and stir until thoroughly combined. Turn the resultant dough onto a floured surface and knead until smooth and elastic.
Tear off pieces of the dough and roll into 3cm balls. Place these on a well-greased baking tray, flattening them slightly and spacing them at least 8cm apart. Once the baking sheet is covered transfer to an oven pre-heated to 180°C (350°F/Gas Mark 4) and bake for about 10 minutes, or until flattened and golden brown all over. Allow to cool for 10 minutes on the baking tray then transfer to a wire rack and allow to cool completely.
