Honey Orange Koskosi

Ingredients:

225g couscous
500ml water
125ml orange juice
80g sultanas
125ml honey
1 tsp ground cinnamon
1/2 tsp ground allspice
sliced or slivered almonds

Method:

Combine the water and orange juice in a saucepan. Bring to a boil over medium heat then add the sultanas and reduce the heat to a simmer.

Continue simmering for a few minutes until the sultanas are plump then add the honey and spices, mixing thoroughly to combine.

At this point add in the couscous, cover the pan with a lid and take off the heat. Set aside for the couscous to cook for 10 minutes.

Take off the lid and fluff the couscous with a fork.

Turn onto a serving dish, mound or shape into balls with an ice cream scoop, garnish with a drizzle of honey and a scattering of slivered almonds and serve.
