Honey Bread

Ingredients:

240g flour
120g sugar
120g honey
250ml hot water
1/2 tsp baking powder
1/2 tsp bicarbonate of soda

Method:

Combine the flour and sugar in a bowl. Meanwhile, melt the honey with the hot water, add to the flour mix and stir to combine. Scatter the baking powder and bicarbonate of soda over the top then stir to combine. Turn the mixture into a greased and floured loaf tin then transfer to an oven pre-heated to 160°C and bake for about 60 minutes, until well risen, golden and cooked through (a skewer inserted into the centre of the cake will emerge cleanly).

Allow to cool in the tin for 10 minutes then turn onto a wire rack to cool before slicing and buttering. As variations you can also add spices and/or freshly-grated lemon zest to the mix.
