Home-made Crisps is a traditional British recipe for making home-made potato crisps (potato chips) from deep fried thin potato slices that are deep fried to cook and seasoned with salt and paprika. Making your own baked homemade crisps (potato chips for those from the US) at home is a healthier alternative than packaged potato snacks. You can also vary the flavourings to your own desires. This is the chef's way of making potato crisps, slightly adapted for home cooking. I'm using one of my favourite potatoes, Maris Pipe, for this recipe.
Ingredients:
2 Maris Piper potatoes
vegetable oil, for deep frying
sea salt
smoked paprika (optional)
Method:
Pre-heat a deep-fat fryer of vegetable oil to 170°C or use a large pan. Peel the potatoes and slice thinly (easiest done with a mandoline). Take care to dry the potato slices with kitchen paper before frying
Deep fry the potato slices until light brown and crisp. Depending on the size of your fryer, you may have to do this in batches (don't over crows as this will reduce the temperature of the oil too much and the potatoes will not crisp up).
Sprinkle the crisps with sea salt and, optionally, smoked paprika (depending on the flavour you're aiming for).
