Ingredients:

375ml water
300g white sugar
85g cocoa powder
pinch of salt
1 tsp vanilla extract

Method:

Combine the water, sugar, cocoa powder and salt in a saucepan. Beat the mixture until smooth (you don't want clumps of cocoa powder) then set over low heat.

Cook, whisking constantly, until the mixture thickens and begins to simmer.

Take off the heat and beat in the vanilla extract. Serve warm, or transfer to a jar and refrigerate until needed.
