Hokey Pokey

Hokey Pokey is a traditional New Zealand recipe (dating back at least to the 1950s) for a classic candy (a cinder toffee in fact) made from sugar and syrup. The full recipe is presented here and I hope you enjoy this classic New Zealand version of: Hokey Pokey.

Ingredients:

5 tbsp sugar
2 tbsp golden syrup
1 tsp baking soda

Method:

Add the sugar and golden syrup in a heavy saucepan and slowly bring to the boil. stirring all the while. Once the mixture begins to foam lower the heat to a simmer and continue heating for a further 4 minutes, stirring frequently. Remove from the heat and add the baking soda quickly. Pour immediately onto a greased baking tray.

Once cold and set lift from the baking tray and break into pieces with a rolling pin. (Make sure you keep all the fine shards as they make an excellent addition to ice cream.)
