Halloween Fudge is a modern Canadian recipe for a classic orange-coloured cream cheese fudge made from a cream cheese and white chocolate base with nuts that's finished with orange and brown sprinkles. Ingredients:
220g cream cheese, softened
450g icing sugar
12 squares of white chocolate, melted
75g toasted walnut or pecan nut pieces
1 tsp vanilla extract
8 drops yellow food colouring
4 drops red food colouring
orange and brown sprinkles (they types used for cake decorating), to decorate (optional)
Method:
Turn the cream cheese into a large bowl and beat with an electric mixer until smooth and creamy. Gradually add the sugar, beating well with the mixer to incorporate the sugar thoroughly after each addition.
Stir in the melted white chocolate, vanilla extract, nuts and food colouring, ensuring that they are well blended and that the colour of the mixture is a deep orange.
Line a 10cm square pan with kitchen foil and grease with butter then spread the fudge mixture in this. Scatter over the orange and brown sprinkles then transfer to the refrigerator.
Chill until firm then cut into serving-sized squares. Store in an air-tight tin in a cool spot before serving.
