Guinness Cheese Sauce

Ready in just a few minutes, this Guinness cheese sauce is a perfect dip for snacks or makes a great sauce for burgers and hot dogs.

Ingredients:

3 tbsp unsalted butter
3 tbsp plain flour
250ml whole milk
120ml Guinness
1 tsp Worcestershire sauce
1 tsp Dijon mustard
½ tsp garlic powder
¼ tsp salt
250g vintage Cheddar cheese, grated

Method:

Set a medium-sized saucepan over medium heat. Add the butter and when foaming whisk in the flour. Continue cooking the roux, stirring constantly, for 1 minute until the flour is no longer raw and the mixture has darkened slightly.

Whisk in the milk and continue heating the mixture until it thickens slightly (about 1 minute).

Now whisk in all the remaining ingredients and heat until the cheese has melted and the mixture is smooth.

The beer cheese will adopt a brown colour due to the Guinness in it, if you want it to have a more orange fake cheese colour, add 1 drop of red and 2 drops of yellow food colour (but I usually don't bother).

Pour the resultant Guinness cheese sauce into a serving dish and serve with your favourite ingredients for dipping. This also works as a cheese sauce for burgers, hot dogs and the like.
