Guernsey Biscuits

Guernsey Biscuits is a traditional English recipe (from the channel island of Guernsey) for a classic milky biscuit (cookie) made from a yeasted dough sweetened with sugar that are oven baked to cook. Ingredients:

450g plain flour
15g salt
100g lard or margarine (or a mix)
25g fresh yeast
15g sugar
250ml lukewarm blend of water and milk

Method:

Sift together the flour and salt into a bowl. Dice the fats, add to the bowl and rub into the flour with your fingertips until the mixture resembles fine crumbs.

Cream the yeast with the sugar and add to the liquid. Cover and set aside in a warm place for about 15 minutes, or until frothy. At this point, work the yeast mixture into the flour mix and bring everything together as a dough. Turn onto a lightly-floured work surface and knead thoroughly until smooth and elastic.

Turn into a bowl, cover and set aside in a warm place to rise for 90 minutes. At this point, turn the dough onto a floured work surface and knock it back. Knead well then form into balls. Flatten these between your palms then roll into biscuit shapes.

Arrange on a greased baking tray then set aside in a warm place to rise for 20 minutes. After this time, transfer to an oven pre-heated to 200°C and bake for 20 minutes. When done, transfer to a wire rack and allow to cool completely before storing or serving.
