Ground Elder and Potato Omelette is a modern British recipe for a classic dish of fried potatoes, garlic and ground elder leaves bound with egg and milk that's finished under the grill. Ingredients:
2 boiled potatoes, peeled and thinly sliced
1 garlic clove, crushed
1 tbsp duck fat (or olive oil)
12 ground elder (goutweed) leaves, finely shredded
1 egg
50ml milk
salt and freshly-ground black pepper, to taste
Method:
Beat together the egg and milk in a bowl. Season to taste then set aside.
In the meantime, melt the fat in a frying pan, add the potatoes and garlic and fry until lightly browned (about 6 minutes). Stir in the ground elder and fry for a further 3 or 4 minutes. Spread the mixture evenly in the pan then pour in the egg mixture.
Cook for about 2 minutes, or until the egg is set beneath then place under the grill to brown and serve immediately.
