This is a Ghanaian recipe from the Volta river region of Ghana. It's one form of fufu that I can cook easily here in South Africa as there's a glut of green bananas from the garden every year.
Ingredients:
6 green (unripe) bananas, peeled
Method:
Slice the green bananas into rounds, then place in a blender with 125ml (1/2 cup) water. Process until smooth, adding a little more water if needed (you want a consistency about that of double (heavy) cream).
Pour the liquid into a small saucepan, bring to a simmer and cook, stirring constantly, until the mixture thickens to a fufu-like consistency and begins to come away from the sides of the pan. If you like a soft fufu add a couple of tablespoons of water at this point and mix in thoroughly.
Reduce the heat to low, cover the pot and steam gently for 8 minutes. This ensures that the green banana is thoroughly cooked and you will not detect any raw flavour.
Turn the mixture onto a plate and knead gently into a smooth ball. Serve as you would any fufu.
