Ingredients:
900g very lean minced lamb
1 large egg, lightly beaten
1 onion, finely chopped
1 tsp salt
300ml hot chilli sauce
300ml grape jelly
1 tbsp lemon juice
Method:
Combine the chilli sauce, jelly and lemon juice in a large saucepan and heat slowly to boil. Mix together the minced lamb, egg, onion and salt then form meatballs from the mixture. Gently drop these into the sauce and simmer for about 35 minutes.
It is better to make the meatballs a day ahead of time and to store them in the fridge as they will absorb more of the sauce. You can also cool the meatball and sauce mix in the fridge and re-heat the following day if you wish. This gives a much richer combination.
Serve with rice and drizzle with some of the cooking liquid.
