Ingredients:
For the Cake:
550g (or 1 box) Yellow Cake Mix
1 egg
100g butter, melted
For the Filling:
300g cream cheese, softened
2 eggs
1 tsp vanilla extract
150g butter, melted
500g icing sugar
Method:
In a mixing bowl, combine cake mix, egg and butter then beat thoroughly to combine with an electric mixer. Pat the mixture into the base and sides of a lightly greased baking pan (about 30 x 22cm).
Now prepare the filling. Beat the cream cheese in a large bowl until smooth. Add the eggs, one at a time, beating thoroughly after each addition, then add the vanilla extract and butter and mix thoroughly. Now add the icing sugar and mix thoroughly. Spread the mixture over the cake crust then transfer to an oven pre-heated to 170°C and bake for about 40 minutes. Note, do not over-bake, as the centre should remain a little gooey.
Remove from the oven and allow to cool before slicing and serving.
