Ingredients:
540g Gluten-free Brownie Mix
2 eggs
60ml vegetable oil
60ml water
75g chopped walnuts
100g dark chocolate (at least 70% cocoa solids) chocolate chips
Method:
In a large bowl combine the gluten-free brownie mix, the eggs, vegetable oil and water. Stir with a wooden spoon until thoroughly blended (don't worry, the batter will be thick) then stir-in the walnuts and chocolate chips (or chopped chocolate).
Turn the mixture into a well-greased 25cm round cake tin and place in an oven pre-heated to 170°C and bake for about 25 to 30 minutes, or until the top springs back when pressed and a skewer inserted into the centre of the cake emerges cleanly.
Allow to cool for 10 minutes in the tin then turn onto a wire rack and allow to cool completely before serving.
