Glowing Jack-o-Lantern Biscuits

Glowing Jack-o-Lantern Biscuits is a modern British recipe for a classic Halloween snack of a butter, sugar, flour and egg biscuit shaped into a pumpkin where the eyes, nose and mouth are filled with crushed lemon drop sweets. Ingredients:

100g butter
200g granulated sugar
1 egg
1 tsp vanilla extract
280g plain flour
2 tsp baking powder
1/4 tsp salt
1 tbsp milk
orange and green food colouring
160g lemon drops

Method:

Crush the lemon drops in a food processor (if the mixture becomes sticky, add a little icing sugar until they dry out then set aside.

Cream together the butter and sugar until pale and fluffy then add the egg and vanilla extract and beat together to combine. Now beat in the flour, baking powder and salt, adding a little milk if the batter is too stiff.

Turn the dough out and cut off 1/8 and set aside. Return the dough to the bowl, add a few drops of orange colour and mix in until the dough is orange. Place the small pice of dough you just removed, add a little green food colour and mix into the dough until you have a small green piece.

Now take the orange dough and tear off pieces large enough to form 2.5cm diameter balls. Flatten these with your hand to form a pumpkin shape. Transfer these to a baking tray lined with greased foil as you finish making them then take the green dough and roll out to make stems. Attach these to the tops of the orange 'pumpkin'. Use a sharp knife to carefully cut out spaces for the eyes, nose and mouth. Fill these spaces with the crushed lemon drops.

Transfer to an oven pre-heated to 170°C and bake for between 8 and 10 minutes, or until the biscuits are cooked through (only cook until no longer raw, do not allow to brown). Allow to cool completely then carefully peel off the foil. You will end up with pumpkin-shaped biscuits with glowing yellow eyes.
