Gingerbread Men #2

These classic spicy people-shaped biscuits are a firm favourite in the North of England and this recipe originates from Newcastle.

Ingredients:

350g plain flour
1 tsp bicarbonate of soda
2 tsp ground ginger
100g butter, diced
175g light brown sugar
4 tbsp golden syrup
1 egg, beaten
currants to decorate

Method:

Sift the flour, bicarbonate of soda and ginger into a mixing bowl then add the butter and rub in with your fingertips until the mixture resembles fine breadcrumbs then add the sugar and stir to combine.

Beat the syrup into the egg until smooth then add to the flour mix. Mix together until a smooth dough is formed and turn onto a lightly-floured surface. Divide in half and roll each half until about 5mm thick. Either with a knife and a paper template or a gingerbread man cutter cut out gingerbread men until all the dough has been used.

Place the gingerbread men on a greased baking tray and decorate with currants to represent eyes and buttons. Then place in an oven pre-heated to 190°C and bake for about 12 minutes, or until the biscuits are cooked through and golden brown in colour. Leave to cool on the baking tray for 10 minutes then transfer to a wire rack and allow to cool completely. Store in an air-tight tin.
