Gingerbread Cookies is a traditional American recipe for a classic soft and chewy cookie (biscuit) made with a gingerbread-style mix. The full recipe is presented here and I hope you enjoy this classic American version of: Gingerbread Cookies.
Combine the flour, baking powder, salt, baking soda, cloves, ginger and cinnamon in a bowl. Stir to combine then cube the butter and add to the bowl. Rub the butter into the flour mix or cut in with a pair of knives. Now add the treacle, flour and egg and bring together as a dough.
Turn the dough onto a lightly-floured surface and roll out to about 6mm thick. Cut into circles with a 6cm pastry cutter then transfer to a lightly-greased baking tray (re-roll the scraps to make more rounds). Place in an oven pre-heated to 180°C and bake for about 10 minutes, or until golden. Allow to cool on the tray for 5 minutes then transfer to a wire rack to cool completely.
