Ginger Bananas is a traditional Seychellois (from the Seychelles) recipe for a classic dessert of lightly-spiced banana slices cooked in a blend of ginger syrup, rum and orange juice. The full recipe is presented here and I hope you enjoy this classic Seychellois version of: Ginger Bananas.

Ingredients:
3 tbsp sultanas
4 large, firm, bananas, peeled and sliced
fresh ginger, thinly sliced, to taste
2 tbsp ginger syrup (from stem ginger)
2 tbsp orange juice
2 tbsp rum
12 strips of orange zest
butter for greasing
Method:
Place the sultanas in a bowl, cover with boiling water and set aside to soak and plump up for 10 minutes then drain.
Grease a large plate or oven-proof dish (a flan dish is ideal) with plenty of butter. Place in an oven pre-heated to 200°C for 10 minutes, or until the butter has melted. Pour off all the excess butter (retain this) then arrange the banana slices in the dish. Drizzle over the reserved melted butter and sprinkle over the sultanas and ginger slices.
In a small bowl, whisk together the ginger syrup, orange juice and rum. Drizzle this mixture over the banana slices (reserve a little) then arrange the orange zest strips over the top. Return the dish to the oven and bake for 10 minutes. Every 5 minutes drizzle a little more of the sauce over the top to prevent the bananas from drying out. Serve hot, accompanied by ice cream or custard.
