Gari Snack is a traditional Nigerian recipe for a classic snack made from dried and roasted cassava grains that are softened in water, soaked in milk, sweetened and served chilled. The full recipe is presented here and I hope you enjoy this classic Nigerian version of: Gari Snack.

This snack is also known as 'gari pudding'.
Ingredients:
6 tbsp gari (dried and roasted cassava grains)
milk
sugar, to taste
ice cubes, to chill
peanuts, to garnish
Method:
Place the gari in a large cup or bowl. Pour over enough water to cover the gari by at least 3cm. Set aside for 20 minutes to allow any impurities to rise to the surface then pour these out.
Repeat this process until the water above the gari is clean and clear. Drain the gari then pour in just enough milk to cover and set aside for 20 minutes in the refrigerator.
Sweeten to taste with milk and add a few ice cubes to chill. Garnish with peanuts then eat immediately with a spoon.
