Ingredients:
1 medium yam
oil for deep frying
Method:
Peel the yam then cut into strips about 6cm long and 5mm in cross-section. Heat oil in a pan or wok (or a deep fryer). When the oil is hot (a piece of yam will sizzle when dipped in the oil) add a batch of yam pieces and cook for about 10 minutes, or until golden brown on the outside and cooked through.
Drain on kitchen paper and serve as a snack or accompaniment. These go very well with hot pepper sauce to dip in.
