Frango de Cafreal (Barbecued Chicken)

Frango de Cafreal (Barbecued Chicken) is a traditional Mozambican recipe for a classic dish of chicken in a garlic, chilli and ginger flavoured oil that's marinated and cooked on a barbecue. This dish is also known as Frango รก Zambeziana.

Ingredients:

2 prepared chickens (about 1kg each)
4 cayenne chillies, finely chopped
1 tbsp salt
2 garlic cloves
2 tbsp freshly-grated ginger
1 tsp paprika
120ml oil

Method:

Combine the chillies, garlic and ginger in a mortar and pound to a paste. Work in the salt, paprika and oil and mix to a smooth paste.

Prick the chickens all over with a sharp-tined fork then rub both outside and in with the chilli, garlic and ginger paste. Place in a roasting tin, cover and set aside to marinate for 30 minutes. In the meantime, pre-heat your barbecue.

After this time, split the chickens in half then place each half on the hot barbecue and grill for about 25 minutes per side, or until thoroughly cooked through.

Serve hot, accompanied by boiled rice.
