Firecracker Barbecued Salmon

Ingredients:

4 salmon steaks (about 150g each)
60ml groundnut oil
2 tbsp soy sauce
2 tbsp balsamic vinegar
2 tbsp spring onions, finely chopped
1 1/2 tsp brown sugar
1 garlic clove, minced
3/4 tsp fresh ginger, finely grated
1/2 tsp hot chilli flakes (or to taste)
1/2 tsp sesame oil
1/8 tsp salt

Method:

Combine all the dressing ingredients in a bowl and whisk to blend. Pour a little in the base of a flat-bottomed glass or ceramic dish. Sit the salmon steaks on top then pour over the remaining marinade. Cover with clingfilm (plastic wrap) and set aside in the refrigerator to marinate for about 5 hours.

How cook, remove the salmon steaks from their marinade then place on a hot barbecue, brushed with oil. Cook over medium coals for about 4 minutes per cm of thickness (measure at the thickest part). Turn the steaks half way through and brush with any left-over marinade.

They are done when cooked through and the flesh flakes easily with a fork.
