Eggy Bread is a traditional British recipe for a classic breakfast dish of bread dipped in a blend of milk and eggs that's flavoured with cayenne pepper, paprika and thyme and fried in butter before serving. This has been a children's favourite for generations. It's also great as a component of breakfast. I recently made this for my wife and son. Neither had heard of nor tasted this dish before and I realized it's not widely known (both loved it though). As a result I decided to include it here. This is a savoury version, but you can also make sweet versions, just replace the spices and seasonings with sugar and cinnamon. One egg is generally enough for 2 slices of bread.
Ingredients:
4 generous slices of wholemeal bread
8 tbsp milk
2 eggs
1/4 tsp paprika
pinch of cayenne pepper
generous pinch of dried thyme
salt and black pepper, to taste
50g butter
Method:
Whisk together the eggs and milk then add the spices and season to taste. Pour half into a shallow bowl and add the first two slices of bread. Leave in the mixture to soak for a few minutes, turning half way through.
Melt half the butter in a pan and when foaming add the bread. Fry until golden brown and fluffy on both sides then set aside to keep warm as you prepare the remaining bread in the same fashion. Serve immediately.
