This is a rather classy breakfast dish and the egg and shrimp mixture is typically served in bread cups.
Ingredients:
4 eggs, well beaten
1 tbsp milk
2 tbsp sunflower oil
250g shrimps (prawns), peeled and de-veined
1/2 tsp sea salt
1 tsp hot chilli powder
Method:
Whisk the milk into the eggs and set aside.
Heat the oil in a frying pan, add the shrimps and fry, stirring frequently, until they turn pink (about 6 minutes). Season with the salt and chilli powder. Stir to coat, then add the egg mixture to the pan.
Whisk with a fork and cook until the eggs begin to set, but remain moist (about 5 minutes).
Either serve hot on buttered toast or use to fill bread cups.
