Dodo (Fried Plantain Accompaniment)

Dodo (Fried Plantain Accompaniment) is a traditional Nigerian recipe for a classic accompaniment of plantains that are sliced, deep fried, seasoned with salt and served as an accompaniment. Ingredients:

4 ripe plantains
salt, to taste
oil for frying

Method:

Pour oil into a skillet or large saucepan so that it's about 15mm in depth.

Take the plantains and slice in half lengthways then cut into pieces about 6mm thick.

When the oil is hot add a layer of sliced plantain and fry on both sides until golden brown (turn over when the base has browned to your liking).

When done, remove with a lotted spoon and drain on kitchen paper then cook the next batch.

Season with salt and serve as an accompaniment to a stew, fried eggs or rice and beans.
