Doce de Papaia (Sweet Papaya Preserve)

Ingredients:

2 large papayas
3 cinnamon sticks
400g sugar

Method:

Wash the papaya, slice in half then scoop out the seeds before peeling and chopping the flesh. Place the flesh in a bowl, mash coarsely then transfer to a pan with the cinnamon sticks.

Heat gently until almost all the water has evaporated away and stir half the sugar. Stir until the sugar has dissolved.

Place the remaining sugar in a pan and heat until the sugar dissolves and begins to caramelize.

Stir this into the papaya mix. Stir to combine and cook for a few minutes then take off the heat and set aside to cool.

Spoon the papaya mixture into cleaned and sterilized jars. Seal with lids and store in the refrigerator.
