Date and Bran Muffins is a modern British recipe for a classic breakfast muffin containing dates, walnuts and bran cereal in the batter. The full recipe is presented here and I hope you enjoy this classic British version of: Date and Bran Muffins.
Combine the cereal and milk in a bowl and set aside for a few minutes, or until most of the milk has been absorbed.
Sift together the flour, baking powder, salt and sugar into a medium-sized bowl. Stir to mix well then add the dates and nuts. Toss to combine.
Add the egg and oil to the soaked cereal mixture and beat well with a fork to combine. Pour this wet mixture into the flour mix and stir until the dry ingredients are well moistened (the batter will look lumpy, do not worry).
Divide the batter between the well-greased wells of 12 muffin cups, filling each one no more than 2/3 full.
Transfer to an oven pre-heated to 200C (400F, Gas Mark 6) and bake for about 30 minutes, or until nicely browned.
Remove from the muffin tin and serve hot, accompanied by butter and preserves.
