This is a classic accompaniment from the Cook Islands, ripe pawpaw (papaya) covered in mayonnaise flavoured with curry powder and mango chutney. It can also be made with bananas.
Ingredients:
400g papaya, peeled, de-seeded and cut into chunks
200ml mayonnaise
1 tbsp curry powder
6 tbs mango chutney, blended until smooth
Method:
Blend together the mayonnaise, curry powder and mango chutney in a bowl.
Add the papaya and toss to combine. Chill slightly in the refrigerator before serving as an accompaniment to barbecued meat or fish.
