Cupcake Christmas Trees is a modern Canadian recipe for a classic set of muffins that are decorated as parts of a Christmas tree and arranged to look like a large Christmas tree before serving. Ingredients:
1 batch (550g [19 1/2 oz]) Copycat White Cake Mix
3 large egg whites
250ml (1 cup) buttermilk (see the home-made buttermilk recipe for making your own)
2 tsp vanilla extract
1/2 tsp almond extract
2 batches Vanilla buttercream icing
Green food colouring
Chocolate or black liquorice
Shoestring liquorice
Holiday sweets (candies) of your choice
Method:
Cream the copycat white cake mix until soft then add the buttermilk, vanilla extract and almond extract. Beat thoroughly then add the egg whites and beat to combine.
Divide the resulting batter between 24 muffin cups that have been lined with paper cases, filling each one no more than 3/4 full then transfer to an oven pre-heated to 180°C and bake for about 20 minutes, or until the top is springy to the touch and a skewer inserted into the centre of the cake emerges cleanly. Turn out onto a wire rack and allow to cool before decorating.
Decorate two or four cupcakes with vanilla icing then top these with pieces of chocolate, black liquorice or brown icing to make tree trunks.
Stir a few drops of food colour into the remaining icing and use to cover the remaining cupcakes. Arrange six green cupcakes in a tree shape above each trunk cupcake. Decorate as desired with shoestring liquorice and Christmas sweets (candies).
