This is a classic breakfast dish from Havana in Cuba. The dish is often made spicy by placing finely-chopped habanero chilli pieces under the eggs.
Ingredients:
12 large eggs
2 medium chorizo sausages, finely chopped
1 habanero chilli, finely minced (or to taste)
180ml whole milk
salt and freshly-ground black pepper
6 tbsp butter, melted
thyme leaves, to garnish (optional)
Method:
Take 6 individual gratin dishes or large oven-proof ramekins and butter them lightly. Divide the chorizo between them and top with the minced habanero chilli. Break 2 eggs into a cup and pour on top of the chorizo. Add 1 tbsp melted butter and 2 tbsp milk on top.
Place on a baking tray and set in an oven pre-heated to 180°C. Bake for about 10 to 12 minutes (or until the whites are set but the yolks remain soft). Season with salt and pepper and serve immediately garnished with a few fresh thyme leaves.
