Csusztatott Palacsinta (Chocolate Pancakes)

Csusztatott Palacsinta (Chocolate Pancakes) is a traditional Hungarian recipe for a dessert of pancakes that are sprinkled with grated chocolate and stacked in a baking dish before being oven baked, sliced and served. Ingredients:

3 eggs, separated
100g icing sugar
1 tsp vanilla extract
2 tbsp butter
120ml milk
120ml single cream
190g plain flour
2 tbsp butter
75g grated dark chocolate

Method:

Cream together the egg yolks with 2 tbsp sugar, the vanilla extract and 2 tbsp butter. Beat in the milk and cream then add the butter and stir to a smooth batter.

Meanwhile, beat together the egg whites and the remaining sugar in a clean bowl until stiff. Fold the egg whites into a batter then use the remaining butter to grease a non-stick frying pan and a baking dish of about the same size. Cook a pancake of about 6mm thick in the frying pan on one side only. Remove with a spatula and set in the baking dish.

Sprinkle some of the chocolate over the top then repeat the cooking and layering process until the very last pancake. For this final pancake cook on both sides and place on top of the pancake stack.

Transfer to an oven pre-heated to 150°C and bake until the chocolate melts (about 15 minutes). Remove from the oven, slice like a cake and serve.
