Crowberry Orange Jelly

Ingredients:

500ml crowberry juice
360ml orange juice
35g powdered pectin
900g sugar

Method:

Combine the crowberry juice and orange juice in a large saucepan. Scatter over the powdered pectin and stir until dissolved.

Bring the mixture to a rolling boil then add all the sugar. Stir constantly until the sugar has dissolved then bring to a rolling boil again. Boil the mixture hard for 1 minute then take off the heat and skim off any scum from the surface.

Immediately pour the jelly into sterilized jars that have been warmed in the oven (ensure you leave a 5mm head-space). Wipe the jar rims clean then secure on the lids. Set aside to cool, label and store.
