These are a traditional New Orleans breakfast treat and in the past, women would walk the streets of the French Quarter selling these deep-fried cakes for breakfast.

According to New Orleans tradition these should be accompanied by coffee that's: black as the Devil, strong as Death, sweet as Love and hot as Hell.

Ingredients:

6 tbsp plain flour
3 tbsp caster sugar
2 tsp baking powder
1/4 tsp salt
1/4 tsp vanilla extract
300g cooked rice
2 eggs
pinch of freshly-grated nutmeg
oil for cooking
icing sugar to dust

Method:

Sift the flour, baking powder and salt into a bowl then stir-in the caster sugar and vanilla extract.

In a separate bowl beat together the rice and eggs then add the flour mixture and stir to combine. When thoroughly mixed add oil to a wok or deep fryer to a depth of at least 5cm and heat to about 180°C. As soon as the oil is hot drop the rice mixture by the tablespoon into the hot fat and fry until golden brown all over and cooked through. Remove the cakes with a slotted spoon and drain on kitchen paper.

Alternatively add a little extra flour into the mixture, shape into patties and shallow fry in oil or butter.

Sprinkle with icing sugar and serve hot.
