Ingredients:

1kg cowberries
200ml water
600g caster sugar

Method:

Combine the fruit and water in a saucepan and bring to the boil. Reduce the heat and simmer for 8 minutes, skimming the froth from the surface as it appears.

Add the sugar and stir to dissolve. Bring back to a boil and cook for 8 minutes before pouring into preserving jars and allowing to cool.

Store in the refrigerator. It will keep for up to 3 weeks.
