This a tart juice that makes a refreshing juice. It can also be added to sweet and savoury dishes in the same way as or instead of verjuice or lemon juice.

Ingredients:

500g ripe cornelian cherries
500ml water

Method:

Combine the cherries and water in a saucepan, bring to a simmer and cook gently for about 10 minutes, or until the cherries have burst.

Pass through a food mill to process then sit the mixture in a fine-meshed sieve (or jelly bag). Allow the liquid to drain through over night.

You will now have a liquid that's the cherry juice and the cherry pulp which can be turned into fruit butters or sauces or added to jams and jellies.
